Jo-Sef Simply Delicious Chocolate O's - Gluten Free and Dairy Free Cookies

You would not believe how happy I was to see gluten-free, dairy free chocolate cookies in a local store. This is the first time I ever had chocolate cookies since I've been gluten free and dairy free. I bought the cookies from a new organic store, Nature's Discount Nutrition Center in Ellersie Plaza. I almost went crazy when I went in there. I wanted to buy every box of gluten free cereal but I had to force myself to stop. They had many flavours. I was so happy to see something else other than oats. I prefer variety, I don't want to be eating the same thing for too long.

The cookies I bought were Jo-Sefs Sandwich Chocolate O's. The cookies were great. They almost tasted like Oreo cookies.

 Also, on the box Jo-Sef stated that the cookies are "Nut Free, Lactose/Dairy Free, Casein Free and Vegan"

Coconut Drops are a common baked treat found in bakeries in Trinidad and Tobago. I miss them a lot so I decided to make some. I used the Long Time Coconut Drops recipe from The Multi-Cultural Cuisine of Trinidad & Tobago & The Caribbean cookbook from Naparima Girls’ High School. I substituted the flour with the Perfect Flour Blend from Namaste Foods . I bought this flour from Be Free Foods . The flour could also be ordered Amazon . The Coconut Drops came out great, the texture and taste was good. I kept the recipe simple. Next time, I will add raisins or sultanas with less sugar so it would not be too sweet.

Gluten Free Baking Class with Moy's Gluten Free Kitchen

Yesterday, I attended the first official Gluten Free Baking Class at Moy’s Gluten Free Kitchen . It was a great experience. I received a lot of great tips and felt more motivated to bake. Each participant baked a loaf and did adaptations to the recipe. We made a non-vegan and a vegan version (without eggs). Both versions of the bread came out great. We also learnt how to bake cookies and muffins.
